Wine making
A wine year has many facets and the tasks of a viticulturist and wine maker are complex. In order to meet the challenges of an increasing climate diversity, we use state-of-the-art machinery in our vineyards and wine cellar. Yet, the cultivation of grapes in harmony with nature and the special challenges of our steep slopes still require traditional manual work. The most exciting moment in a wine year is the harvesting and sorting of grapes. It must be well-planned and organized. It is only thereafter that the wine maker can excel with his expertise in the vinification process. This includes the control of the fermentation process, the use of yeasts and observing the different requirements in the process of making red and white wines. In producing our red wines we use, for example, a punch-down fermenter. Thus, each year our master wine grower Burkhard Jostock starts again creating affordable quality wines for our customers.
